I love a great tasting carbohydrate, and sweet potatoes are one of my favorites. When eating healthy and clean you want to stick to complex carbohydrates. What I love about this sweet potato recipe, is I can make it in bulk, and my husband and I have plenty for the week.

This recipe is ONLY 3 ingredients and not time-consuming at all. I think the sweet potato has so much flavor that you don’t need to add much to enjoy the taste.

Sweet Potato: George Washington, our first present, grew sweet potatoes on his farmland in VA. Also, sweet potatoes are a great source of fiber (when you eat the skin which is my favorite), vitamins E, C, B-6, and nutrients such as potassium, and iron. The leading producer of sweet potatoes in the USA is North Carolina who produce 40% of the national supply (Thank you, North Carolina).

Ingredients:
-3 Sweet Potatoes
-1/4 Cup of Almond Milk
-3/4 Chopped Yellow Onion

Directions:
1.)Wash your sweet potatoes and cut off the ends. Then chop the potato into squares approximately 1″ around.
2.) Place your chopped sweet potatoes in a pot. Fill water until it covers the potatoes. Boil until soft (approximately 10-15 minutes) where you can put a fork through them.

3.) Chop your onion finely.
4.) In a nonstick pan, spray your pan. Add your onion, and slowly brown your onion (5-8 minutes). Cook until done, and leave to the side.

5.) Once your potatoes are nice and soft, drain the water. Add your milk and onion. Smash until you have the consistency desired.
