Easy Slow Simmer Curry Chicken
We all know I love chicken!! What’s amazing with chicken is that it can be cooked so many different ways and its full of protein. In this blog post I will be sharing my slow simmer curry chicken recipe. Its soooo good and husband approved.
Sometime it gets tough when trying to come up with new recipes. I know I have overcooked chicken, not seasoned it enough, or under cooked it. Its hard to find the happy medium. With this recipe its so easy to follow and you always get juicy chicken. Another added bonus is that I use this recipe for meal prepping all the time. This recipe is perfect for meal prepping and sodium free!
The benefits of chicken are endless. Its a nice lean form of protein, and its a staple when your eating healthy. Chicken is less expensive, and very versatile. Chicken helps with weight loss, controlling cholesterol, controlling blood pressure and providing you many vitamins.
Also this recipe is so simple. There are very few ingredients. And you don’t have to stay over the stove and watch it cook the whole time. Its a time saver for sure.
What You Need:
Chicken, curry, fresh garlic, basil water and pepper. Also I suggest a non stick copper pan like I use, or a wok.
-9 Chicken Breasts
-1 Tablespoon of Curry
-1 Tablespoon of Basil
-1 Tablespoon of Pepper
-1 Cup of Water
-2 Cloves of Garlic
1.) Take your chicken breasts and cube into 2″ squares/slices.
2.) Take your copper pan (which requires no spray or olive oil) and place on medium heat setting.
3.) Add your chicken to the pan, and add 1 cup of water.
4.) Add your curry, basil, pepper and fresh garlic (chopped up). Mix well. Add cover and cook for 15 minutes (no need to stir at this point).
5.) Mix your chicken and cook for 3-5 more minutes until chicken is cooked.
